Apple Pork Skillet

This crazy simple, one-pan skillet dinner is absolute perfection for autumn weeknights. I love a skillet dinner for its versatility and speed of preparation and this one hits the mark.

I recently heard KuneKune pork described as “maple-y” in flavor and thought: YES! It boasts a wonderfully sweet, rich flavor that lends itself so well to simpler dishes. No need for tons of extra ingredients and seasonings to make this meat into something it’s not.

Ingredients

2 T. butter

2 potatoes (I like yukon gold)

2 gala apples

1 lb. fresh ground pork

2 tsp. salt

1 tsp. garlic powder

1 tsp. onion powder

1 tsp. ground thyme

1/2 tsp. ground sage

Optional: balsamic glaze (I like the one pictured above from Aldi)

Instructions

  1. Dice potatoes and apples.

  2. Melt butter over medium low heat in large cast iron skillet. Cook potatoes and apples in butter until golden brown and tender.

  3. Add ground pork and seasonings, stirring and cooking until pork is browned.

  4. Serve with a side of cornbread or your favorite roasted veggies, topped with balsamic glaze if desired.
